I remember growing up in Malaysia and having Thai green curry in various forms nearly every day for lunch.  Yummmm......my mother is a great cook and I have included some of her easy to cook side dishes in this page.

It has been used successful for centuries.It contains about 50% lauric acid which help in preventing various heart related problems including rising cholesterol levels and high blood pressure. Helps in preventing arteriosclerosis. Helps in weight reduction. Strengthens the immune system.

Cucumber Pachadi

Cucumber 2 cups

Green Chilli 2 cut finely

Curry leaves few 

Cumin seed (jeera) 1/4 teaspoon

Grated coconut 1 cup

Curd 1 cup

Water 1/4 cup

Salt to taste

Grind the coconut,green chilli, cumin seed and curry leaves to a paste. Add the curd, mix well and keep aside.

Cook the cucumber with water and salt. When cooked add the above paste and keep stirring for a few minutes in low heat. Remove from fire.

Carrot Thoran

Carrot steamed - 2 cups

Oil 1 tablespoon

Mustard seeds 1/4 teaspoon

Garlic 4 cloves cut finely

Ginger a small piece cut finely

Green chilli 1 finely cut

A few curry leaves Finely cut

Onions Chopped - 2 tablespoons

Coconut scraped - 1/4 cup

Turmeric powder 1/4 teaspoon

Salt to taste

Heat oil in a pan and fry the mustard seeds. Add garlic, ginger, green chilli, curry leaves and onions. Fry until the onions are golden brown. Add the turmeric powder, salt and a tablespoon of water. When the water boils add the carrot and cover the pan and cook for a few minutes. Add the coconut and mix well. Remove from fire.

Tomato side dish

Tomato cut into 1" slices - 2 cups

Mustard seeds 1/4 teaspoon

Coconut oil 1 tablespoon

Big onion sliced 1 cup

Green chilli 1 cut finely

Small piece ginger cut finely

Curry leaves few

Turmeric powder 1/4 cup

Grated coconut 1/2 cup

Salt to taste

Heat oil in a pan. Fry the mustard seeds. Add the onions, green chilli, ginger, curry leaves. When the onions become light brown add the turmeric powder, salt and tomato and stir in medium heat until steam comes. Then add coconut and pepper powder and remove from fire.

Vegetable Stew

Green Peas 100 grams

Carrot 50 grams cut into small cubes

Potato 50 grams cut into small cubes

Ginger 1/2 inch piece cut finely

Green chilli 2 cut into long thin strips

Big onion 1 sliced

Pepper powder 1/2 teaspoon

Curry leaves few

Turmeric powder 1/4 teaspoon

Grated coconut 2 cups

Salt to taste

Grind the coconut and extract 2 cups of milk (1 cup thick milk and 1 cup of second milk) Boil the second milk in medium heat. When it begins to boil add the green peas, carrot, potato, ginger, green chilli, big onion, curry leaves, turmeric powder, salt and cook in low heat. When the vegetables are cooked add the thick milk and pepper powder and stir well for 5 seconds and remove from fire.
